A unique milk, an unrepeatable cheese
Produced exclusively with fresh milk from Brown Swiss cows, our 36-month cheese expresses the full genetic potential of this extraordinary breed. Brown Swiss milk is naturally richer in proteins and kappa-casein B—the ideal protein variant for cheesemaking—which gives the cheese a finer structure and an aromatic complexity unreachable with standard milk.
Organoleptic characteristics
After thirty-six months of aging in our historic cellars in Gainago di Torrile (Parma), the 36-month aged cheese develops:

- Texture: intensely crumbly, very rich in crunchy tyrosine crystals
