How long can Parmesan stay out of the fridge?

A table set for an aperitif, a cheese board left out during lunch: how long can Parmigiano Reggiano stay at room temperature without risk? The answer depends primarily on the room temperature and how long you actually need it out.

The general rule

Parmigiano Reggiano, thanks to its very low moisture content, is much more tolerant of room temperature than fresh cheeses like mozzarella or stracchino. In normal household temperatures (18-22°C), it can stay out of the fridge for a few hours — for example during a meal or an aperitif — without any problem.

Up to 2-3 hours

No problem, even on a hot day, if not exposed to direct sunlight

Beyond 4-6 hours

Better to put it back in the fridge, especially in high summer temperatures

What changes in summer

With high temperatures (above 26-28°C) or direct exposure to the sun, the times shorten: it is better not to exceed 2 hours out of the fridge, and to store the piece as soon as the tasting is finished. The main risk is not so much food safety — Parmigiano remains a hostile environment for bacteria — but rather a superficial softening of the fat that slightly alters its texture.

And if you forget it out all night?

If the piece has been left out for several hours, or even all night, at normal room temperature (not in an overheated kitchen), in most cases it is still perfectly edible — simply check that it does not have any unusual odors or a compromised appearance, and put it back in the fridge as soon as you notice.

For a buffet or a long event

If you need to keep Parmigiano exposed for a prolonged period (a buffet, an event lasting several hours), the best solution is to cut only the amount you expect to serve in the first few hours, keeping the rest in the fridge and bringing it to temperature shortly before serving it again.
