Solo di Bruna®: what it really means

You read it on every wheel of ours, on every package, on every page of our site: Solo di Bruna®. It is not an advertising slogan: it is a precise, verifiable promise that concerns every single liter of milk that enters our dairy.

What it means exactly

"Solo di Bruna®" means that our Parmigiano Reggiano is produced exclusively with milk from Brown Swiss cows. No exceptions, no mixing with milk from other breeds, not even in the smallest part. It is a commitment that we have turned into a registered trademark, precisely to guarantee its traceability and authenticity over time.

  Did you know?

The Brown Swiss breed represents only a small part of the bovine heritage used to produce Parmigiano Reggiano throughout the designation's territory. An authentic "Solo di Bruna" Parmigiano is therefore a niche product even within the PDO itself.

Why we insist on specifying it

In the Parmigiano Reggiano market, the vast majority of production comes from mixed milk, sourced from different breeds blended together. There is nothing wrong with this — it is the norm, and it is still an authentic PDO product. But we have made a different choice, which requires more attention, more organization of the stable, and lower yields.

1

      Only Brown Swiss cows

In our stable, we raise exclusively this breed to avoid any possibility of mixing the milk.

2

      Separate milking and processing

The milk is handled with dedicated attention to maintain its purity until cheesemaking.

3

      Complete traceability

From the stable to the wheel, we always know exactly where the milk we are processing comes from.

"Solo di Bruna is not a detail on a label — it is a choice that affects how we manage the stable and the dairy every day."

What changes in terms of taste

As recounted in our article dedicated to the Brown Swiss breed, the milk from this breed is naturally richer in casein. The result is a more compact texture, which lends itself particularly well to long aging, developing more intense and complex aromas compared to a Parmigiano made from mixed milk at the same age.

The registered trademark

The ® symbol that accompanies "Solo di Bruna" is not decorative: it indicates that it is a registered trademark, which protects this specific characteristic of our product and guarantees its authenticity over time, in the same way that the PDO mark protects the origin and production method of Parmigiano Reggiano in general.
